- 1/4 cup onion
- 5 cloves of garlic - chopped
- 2 crushed bay leaves
- 4 medium tomatoes - diced with seeds removed
- 2 tablespoons ground line rind
- 1/2 cup chopped fresh cilantro
- 3 1/2 lbs. Seafood Mixture - choose what's fresh... snapper, scallops, lobster & calimari chopped into one-inch pieces. Several small whole mussels, clams and shrimp in the shell.
On our way down the peninsula, we used to make a quick stop at the Ensenada open air fish market (after Hussongs) to pick fresh seafood delectables for this hearty feast. Put a splash of olive oil in the bottom of a large pot and fry the onions and garlic, adding tomatoes, orange rind, cilantro and bay leaves. When the onions are transparent, add the seafood mixture and simmer about 15 minutes until the shellfish is fully cooked. Squeeze limes on top, serve with fresh tortillas, salsa and the cold beverage of your choice!
