Crockpot Chicken and Broccoli Teriyaki

  • 2 Chicken Breasts
  • 2 cups of broccoli, cut up
  • 1 1/2 cup chicken broth
  • 3/4 cup soy sauce (I use reduced sodium soy sauce)
  • 1/2 cup brown sugar
  • 3 garlic cloves, minced
  • 1/3 cup diced onion
  • 1 teaspoon ground ginger
  • 1/4 cup water mixed with 3 tablespoons of cornstarch
  • Rice

 

  1. Combine broth, soy sauce, brown sugar, garlic, onion and ginger and mix.
  2. Put chicken and broccoli in crockpot and pour the mix over the chicken.
  3. Cook on low for 4 hours, until the chicken is done.
  4. When the chicken is cooked, start the rice.
  5. Take the chicken and the broccoli out of the crockpot.
  6. Add the water and cornstarch mixture to the sauce in the crockpot and let it simmer and thicken.
  7. Shred the chicken with a fork.
  8. When the sauce is at your desired thickness, take it out and pour it over the chicken and broccoli.
  9. Serve over the rice.
