- 1 cup chopped onion
- 2 garlic cloves, minced
- 1 tsp olive oil
- 2 cups of pineapple chunks and juice
- ½ cup peanut butter
- 1 Tbsp hot sauce
- 1 bunch of spinach, chopped
- ½ cup of cilantro
- Salt to taste
- chopped peanuts
- Rice
- Saute the onions and garlic.
- Add pineapple and simmer for 5 minutes.
- Add peanut butter and hot sauce and simmer for 10 minutes.
- Add spinach and cilantro and simmer for 5 minutes.
Serve over rice and garnish with chopped peanuts.
