Carmen's lentil sausage soup

  • â…“ cup red lentils
  • 1 small onion, chopped
  • ½ cup celery, chopped
  • 12 inches of sausage, chopped
  • 1 can tomato soup
  • ½ tsp. salt
  • ¼ tsp. pepper
  • 1 bay leaf

 

  1. Cook the lentils according to the package instructions (usually 2 parts water to 1 part lentils, boiled for about 8 minutes). 
  2. Sauté the onion, celery and sausage in a separate pan. 
  3. Drain the lentils and add the tomato soup (prepared with 1 can water). 
  4. Add the onion, celery, sausage, and then the salt, pepper, and bay leaf and simmer until flavours are blended.
