African peanut stew

  • 1 cup chopped onion
  • 2 garlic cloves, minced
  • 1 tsp olive oil
  • 2 cups of pineapple chunks and juice
  • ½ cup peanut butter
  • 1 Tbsp hot sauce
  • 1 bunch of spinach, chopped
  • ½ cup of cilantro
  • Salt to taste
  • chopped peanuts
  • Rice

 

  1. Saute the onions and garlic.
  2. Add pineapple and simmer for 5 minutes.
  3. Add peanut butter and hot sauce and simmer for 10 minutes.
  4. Add spinach and cilantro and simmer for 5 minutes.

Serve over rice and garnish with chopped peanuts.
