Black Bean Soup

This is a small recipe that we usually double (or triple).

  • 2 tsp. olive oil
  • 1 cup chopped onions (1 medium onion)
  • 1 cup red bell peppers (1 red pepper)
  • 1 cup carrots (1 or 2 medium carrots)
  • 1 clove garlic, minced
  • 1 jalapeno pepper, seeded and minced
  • 2 cups beef broth (I changed it from 3 cups)
  • 1 cup tomato sauce
  • 2 cans (540 mL each) black beans, drained
  • 1 tbsp. lemon juice
  • 1 tbsp. brown sugar
  • 1 tsp. worcestershire sauce
  • 2 tsp. oregano
  • 1 tsp. chili powder
  • 1 tsp. cumin
  • 1/2 tsp. dried thyme
  • 1/4 tsp. pepper

Garnish

  • sour cream

Serve with

  • Sourdough bread
  • Cheddar Cheese

 

Heat olive oil. Add onions, red peppers, carrots, garlic, and jalapeno. Cook around 5 mins. Add remaining ingredients. Bring to a boil. Reduce heat and simmer covered for 10 min. Puree in blender or food processor. Return to pot. 

Garnish with sour cream.

Serves about 4 people.
