- â…“ cup red lentils
- 1 small onion, chopped
- ½ cup celery, chopped
- 12 inches of sausage, chopped
- 1 can tomato soup
- ½ tsp. salt
- ¼ tsp. pepper
- 1 bay leaf
- Cook the lentils according to the package instructions (usually 2 parts water to 1 part lentils, boiled for about 8 minutes).
- Sauté the onion, celery and sausage in a separate pan.
- Drain the lentils and add the tomato soup (prepared with 1 can water).
- Add the onion, celery, sausage, and then the salt, pepper, and bay leaf and simmer until flavours are blended.
