Chocolate Chip Cookies

  • 1/2 cup butter
  • 6 Tbsp. (â…œ cup) sugar
  • 6 Tbsp. (â…œ cup) brown sugar
  • 1 egg
  • 1/2 tsp. vanilla
  • 1/2 tsp. salt
  • 1/2 tsp. baking soda
  • 1 cup flour
  • 1 cup chocolate chips

 

  1. Mix the wet ingredients, the butter, both sugars, the egg and the vanilla. (You can add 2 tsp. mint extract for an extra flavour twist.)
  2. Mix the dry ingredients and add to the wet ingredients, and then add the chocolate chips.
  3. Drop onto 2 regular pans (makes 2 dozen cookies).
  4. Bake at 175°C (350°F) for 8 or 9 minutes. Remember, you can't underbake a cookie! It just leaves it closer to cookie dough, which is delicious! 

Optional: bake at 300°F - 325°F for 20 minutes as squares.
