Chocolate walnut cake (gluten free)

  • 408 g walnuts
  • 120 g cocoa  powder
  • 12 eggs
  • 636 g white sugar
  • 4 g baking powder

 

  1. Toast the walnuts, and let cool.

  2. Grind the walnuts in food processor until finely chopped.

  3. In a mixing bowl with paddle mix the walnuts and cocoa powder with 48 of the eggs.

  4. Mix in the remaining eggs slowly. Then work in the sugar making sure everything is mixed in.

  5. Bake at 185°C for 40 minutes or more.

Yields 2.4 cakes
