Jen's chocolate cookie sheet cake

Cake

  • 2 cups white sugar
  • 1/2 tsp salt
  • 2 cups flour
  • 1 tsp baking soda
  • 1/2 cup water
  • 1 cup margerine
  • 4 Tbsp cocoa powder
  • 1 cup milk
  • 1 tsp vanilla
  • 2 eggs

Icing

  • 1 cup margerine
  • 6 Tbsp cocoa powder
  • 3/4 cup milk
  • 2 tsp vanilla
  • 2 cups coconut flakes (we prefer sweetened)
  • 3 cups icing sugar

 

Cake

Mix together these dry ingredients in a large mixing bowl:

  • 2 cups white sugar
  • 1/2 tsp salt
  • 2 cups flour
  • 1 tsp baking soda

Bring these ingredients to a boil:

  • 1/2 cup water
  • 1 cup margerine
  • 4 Tbsp cocoa powder

Pour the boiled mixture into the mixing bowl with the dry ingredients.

Mix in these ingredients in the mixing bowl.

  • 1 cup milk
  • 1 tsp vanilla
  • 2 eggs

Pour this batter mixture into a well oiled/sprayed and deep cookie sheet (with a large enough pan, it should end up less than 2 cm deep). Bake at 175ºC (350ºF) for 20 minutes (don't overbake).

Icing

Bring these ingredients to a rolling boil for a couple of minutes:

  • 1 cup margerine
  • 6 Tbsp cocoa powder
  • 3/4 cup milk

Mix in these remaining ingredients:

  • 2 tsp vanilla
  • 2 cups coconut flakes (we prefer sweetened)
  • 3 cups icing sugar

Allow the cake to cool, then pour the icing mixture onto the cake and spread it around evenly.
