Classic Butter Icing

  • 1/2 cup soft butter
  • 2 cups icing sugar
  • 2 tsp. vanilla
  • 2 Tbsp. milk
  • 1 cup icing sugar
  • 1-2 Tbsp. milk

optional:

  • 1/3 cup cocoa powder 

 

Cream 1/2 cup (125ml) soft butter with 2 cups (500ml) icing sugar.

Beat 2 tsp. (10ml) vanilla, 2 Tbsp. (28ml) milk and 1 cup (250ml) icing sugar into mixture.

Gradually add 1 to 2 Tbsp. (14 to 28 ml) milk into icing until smooth and of desired spreading consistency.

For a chocoate icing, add 1/3 cup (90ml) sifted cocoa powder to the first addition of icing sugar.

Fills and frosts two 8-inch layers or a 13x9 inch cake. Icing makes the cake.
