Butterscotch Oat Drops

  • 1/2 cup butter or hard margarine, softened 
  • 1/2 cup brown sugar, packed
  • 1/4 cup granulated sugar
  • 1 large egg
  • 1/2 tsp. vanilla

 

  • 1 cup all-purpose flour
  • 1 cup rolled oats
  • 1/2 tsp. baking powder
  • 1/2 tsp. baking soda
  • 1/2 tsp. salt
  • 1/2 cup chocolate chips (optional)

 

  1. Beat together butter, sugars, egg, and vanilla on medium spead until smooth.
  2. Add the rest of the ingredients and stir with a spoon just until moistened.
  3. Drop by rounded teaspoonfulls onto ungreased cookie sheets. Leave 2 inches between each mound of dough.
  4. Bake on the center rack in the oven for 8 minutes at 350°.
  5. Let stand for 2 minutes before removing cookies from pan.

Makes 2 dozen cookies.
