Hearty Potato Chowder

  • 1/4 cup butter
  • 1 large onion
  • 3 tbsp flour
  • 3 cups (3 medium) cubed potatoes
  • 4 cups milk (or some combo of milk/cream/water)
  • 1 tsp salt
  • 1/4 tsp pepper
  • 2 cups grated cheddar
  • 10 inches of cooked farmer sausage, cut into 1/4" slices (can also substitute with ham or bacon)
  • 1 can of whole kernel corn (optional)

 

  1. Melt butter. Stir in onion and sausage and cook on medium until tender (4-5 minutes).  
  2. Stir in flour plus 3 tbsp liquid until smooth and bubbly (1 minute).
  3. Stir in potatoes, optional corn, milk, salt, and pepper. Cover and continue cooking, stirring occasionally, until potatoes are tender (25-30 minutes).
  4. Stir in cheese. Continue cooking, stirring occasionally, until cheese is melted (2-3 minutes).
