- 1/4 cup butter
- 1 large onion
- 3 tbsp flour
- 3 cups (3 medium) cubed potatoes
- 4 cups milk (or some combo of milk/cream/water)
- 1 tsp salt
- 1/4 tsp pepper
- 2 cups grated cheddar
- 10 inches of cooked farmer sausage, cut into 1/4" slices (can also substitute with ham or bacon)
- 1 can of whole kernel corn (optional)
- Melt butter. Stir in onion and sausage and cook on medium until tender (4-5 minutes).
- Stir in flour plus 3 tbsp liquid until smooth and bubbly (1 minute).
- Stir in potatoes, optional corn, milk, salt, and pepper. Cover and continue cooking, stirring occasionally, until potatoes are tender (25-30 minutes).
- Stir in cheese. Continue cooking, stirring occasionally, until cheese is melted (2-3 minutes).
