Salad
- 4 cups cooked penne pasta
- 1 cup cherry tomatoes, halved
- 1 cucumber, chopped into chunks
- 4 green onions, sliced
- feta cheese
- olives, if desired
Dressing
- 1/4 cup olive oil
- 1/4 cup lemon juice
- 1/8 cup red wine vinegar
- 2 tsp dried oregano
- 1 tsp garlic powder
- Salt
- Pepper
Cook pasta, drain, and rinse with cold water. In a large bowl, toss together pasta, tomatoes, cucumber, onions, and olives. Mix together dressing ingredients, drizzle over pasta mixture and toss to coat. Cover and chill for at least two hours, and up to 24 hours. Add feta cheese and fresh oregano just before serving.
