Beef Barley Soup (sopa de cebada con carne)

  • 1 cup ground beef (or cooked and chopped roast beef)
  • 2 small onions, chopped
  • 2 stalks of celery, chopped
  • 3 large carrots, shredded or chopped
  • 3 medium potatoes, shredded or diced
  • 6 cups water
  • 2 - 4 beef bouillon cubes
  • ½ cup pearl or pot barley
  • 1 Tbsp parsley flakes
  • 1 tsp sugar
  • 1 tsp salt
  • ¼ tsp pepper
  • 1 can corn kernels
  • 796 ml can of diced tomatoes
  • 284 ml can of condensed tomato soup

 

  1. Brown the ground beef along with the onion in a large soup pot.
  2. Add everything else except for the diced tomatoes and the tomato soup, and simmer for about 20 minutes until the vegetables are tender.
  3. Add the diced tomatoes and the tomato soup and simmer for another 15 minutes.
