- 300 g cooked, sliced beets
- 2 small cucumbers
- 1 red onion
- 1 tbsp chopped dill
- Mixed greens
- Nuts or seeds (optional)
- Feta (optional)
Dressing
- 30 mL olive oil
- 1 tbsp white wine vinegar
- 1 crushed garlic clove
- Salt and pepper
Combine the salad ingredients in a large bowl, except the greens.
Whisk oil, vinegar, garlic. Season with salt and pepper.
Top with greens and optional feta cheese.
