This is a small recipe that we usually double (or triple).
- 2 tsp. olive oil
- 1 cup chopped onions (1 medium onion)
- 1 cup red bell peppers (1 red pepper)
- 1 cup carrots (1 or 2 medium carrots)
- 1 clove garlic, minced
- 1 jalapeno pepper, seeded and minced
- 2 cups beef broth (I changed it from 3 cups)
- 1 cup tomato sauce
- 2 cans (540 mL each) black beans, drained
- 1 tbsp. lemon juice
- 1 tbsp. brown sugar
- 1 tsp. worcestershire sauce
- 2 tsp. oregano
- 1 tsp. chili powder
- 1 tsp. cumin
- 1/2 tsp. dried thyme
- 1/4 tsp. pepper
Garnish
- sour cream
Serve with
- Sourdough bread
- Cheddar Cheese
Heat olive oil. Add onions, red peppers, carrots, garlic, and jalapeno. Cook around 5 mins. Add remaining ingredients. Bring to a boil. Reduce heat and simmer covered for 10 min. Puree in blender or food processor. Return to pot.
Garnish with sour cream.
Serves about 4 people.
