- 1 cup ground beef (or cooked and chopped roast beef)
- 2 small onions, chopped
- 2 stalks of celery, chopped
- 3 large carrots, shredded or chopped
- 3 medium potatoes, shredded or diced
- 6 cups water
- 2 - 4 beef bouillon cubes
- ½ cup pearl or pot barley
- 1 Tbsp parsley flakes
- 1 tsp sugar
- 1 tsp salt
- ¼ tsp pepper
- 1 can corn kernels
- 796 ml can of diced tomatoes
- 284 ml can of condensed tomato soup
- Brown the ground beef along with the onion in a large soup pot.
- Add everything else except for the diced tomatoes and the tomato soup, and simmer for about 20 minutes until the vegetables are tender.
- Add the diced tomatoes and the tomato soup and simmer for another 15 minutes.
