Bean bag vegetable soup

Bean soup mix

1 cup of each:

  • Pinto beans
  • Kidney beans
  • Small lima beans
  • Whole green peas
  • Split red lentils
  • Great Northern Beans (white)
  • Yellow split peas
  • Green split peas
  • Whole green lentils
  • Pearl barley

Soup

  • 1.5 cups of the bean soup mix, above
  • 1 large onion, diced
  • 1 large carrot, chopped
  • 560 ml can of diced tomatoes
  • 4 or 5 wieners, chopped
  • ½ tsp chili powder
  • 2 cloves
  • Salt to taste

 

  1. Rinse the bean soup mix, cover generously with cold water and soak overnight.
  2. Drain the bean soup mix, combine it with 3 cups of fresh water. Bring it to a boiland simmer for 1.5 hours until the beans are tender.
  3. Add the soup ingredients. Add the cloves in a tea ball so they can be removed easily at the end.
  4. Simmer until the vegetables are tender. Remove the cloves.
