- 1 small red pepper, chopped
- 1 cup pineapple, chopped
- 1 cup cooked or canned black beans
- 1 small onion, minced
- 1/4 cup pineapple juice
- 2 tbsp cilantro, chopped
- 1 tbsp lemon juice
- 1 tsp cumin
- 1/8 tsp salt & pepper
Stir together. Serve chilled.
