Beef Noodle Soup

  • 1.5 cups browned ground beef (or pieces of leftover roast, etc.)
  • 2 or 3 oxo cubes
  • 7 cups water
  • 1 Tbsp salt
  • ½ tsp pepper
  • ½ cup sliced carrots
  • ½ cup sliced onion
  • ¼ cup sliced celery
  • 1 tsp parsley flakes
  • ½ tsp sugar
  • 796 ml can of diced tomatoes
  • 2 cups egg noodles (or broken spaghetti or vermicelli)

 

  1. Combine all of the ingredients except the tomatoes and egg noodles and simmer for 20 minutes.
  2. Add the tomatoes and egg noodles and simmer for another 7 minutes.

Freezes well.
