Bran muffins

1 1/2 cups wheat bran

1 cup buttermilk (or 1 tbsp lemon juice + regular milk = 1 cup)

1/3 cup oil

1 egg

2/3 cup brown sugar

1/2 tsp vanilla

1 cup flour

1 tsp baking soda

1 tsp baking powder

1/2 tsp salt

1/2 cup raisins   

 

 

1. Mix bran and milk, let stand for 10 minutes

2. Beat oil, egg, sugar, and vanilla together and add to bran mixture

3. Sift together flour, soda, powder, and salt and add to bran mixture.

4. Fold in raisins

5. Bake at 375F for 15 to 20 minutes (until knife comes out clean)
