- 1 pie shell
- 1 pkg. Knox gelatin
- 1/3 cup water
- 3/4 cup sugar
- 1 1/2 Tbsp. cornstarch
- 1/4 tsp. salt
- 1 1/2 cup milk
- 3 egg yolks
- 1 1/2 oz. chocolate chips
- 1 tsp. vanilla
- 1/3 cup rum, or 1 tsp. rum extract
- 3 egg whites
- 1 cup whipping cream
- 1 1/2 Tbsp. sugar
- grated chocolate
- Disolve gelatin in water.
- Make custard by mixing sugar, cornstarch, salt, milk, and egg yolks.
- Bring to a boil and simmer 2 min.
- Mix chocolate chips with 3/4 cup custard and spread in pie shell.
- Add gelatin mix to remaining custard. Stir in vanilla and rum and refrigerate for 40 min.
- Beat egg whites and fold into custard.
- Top with whipped cream and grated chocolate.
